BBQ Avocado Lolly Pops

Prep time: 25 minutes

Method

  1. Empty the tortilla chips into a Food Processor and blend until bread crumb consistency is achieved
  2. Pour crumbs into a shallow bowl
  3. Cut 2 avocados in half
  4. Remove stones and peel off the skin
  5. Cut each half into 2 pieces, so you have 4 wedges per avocado
  6. Brush each wedge with the oil, until fully coated
  7. Take eight BBQ skewers, and slide an avocado wedge on each one, piercing all the way through so it’s like a lolly pop
  8. Hold the skewers over a BBQ until the avocado slightly softens and goes sticky
  9. Using the skewer, dip the sticky avocado into the tortilla chip crumbs to coat
  10. Pour the hot sauce into a serving bowl
  11. Dip the avocado coated lolly pop into the sauce
  12. Eat from skewer

Ingredients

2 Avocados
Extra Virgin Olive Oil
1 bag of Queso Blanco & Lemon Drop Chilli tortilla chips
Cholula Hot Sauce
8 BBQ skewers soaked in water
