Fattoush Salad with Feta & Pomegranate Vinaigrette Tortilla Chips

Serves 6

This is a great side salad or for a meal, serve with meat or hummus.

Method

1. Whisk all the dressing ingredients together.  Toss all the salad components with dressing in large bowl and share onto 6 serving plates.

Ingredients

2 heads Cos lettuce, washed and chopped horizontally into 1 cm pieces
2 heads of chicory, yellow or red, sliced lengthwise and separated
½ medium red onion, sliced
1 large English cucumber, cut in half lengthwise and cut into 2cm slices
250g cherry tomatoes, cut in half
75g radishes, sliced thinly
10g parsley leaves picked and washed
10g coriander leaves picked and washed
10g mint leaves picked and washed
5g dill fronds picked and washed
1 small pomegranate, seeds removed
75g feta cheese, crumbled
100g Feta & Pomegranate Vinaigrette tortilla chips, broken up

Dressing

½ tsp sea salt
1tsp lemon zest
3 tbsp fresh lemon juice
1 tsp za’atar spice
130ml olive oil
