Salsa Habanero Y Piña
Our new Pineapple & Habanero Chilli Tortilla Chips have been inspired by the popular Mexican dish, ‘Salsa Habanero Y Piña’, made up of sweet pineapple and fiery habanero chilli and perfect for dipping. So here's our interpretation of the recipe as a delicious dip:
INGREDIENTS:
- Small fresh pineapple
- Small red onion
- Medium sized red pepper
- 1 tablespoon agave syrup (or light honey)
- Juice of a fresh lime
- Small garlic clove
- Habenaro chilli puree (quantity dependant on heat level required)
- Fresh coriander leaf to garnish
- Pineapple juice (as required)
- Salt to taste
METHOD – this will make a generous amount of salsa
- Cut half of the fresh pineapple into large pieces and chargrill/fry in a pan
- Chop chargrilled pineapple into small pieces. Crush the rest of the fresh pineapple and add both to a mixing bowl
- Chargrill the red pepper, chop into small pieces and add to bowl
- Dice the red onion into small pieces and add to bowl
- Add the juice from one lime
- Crush the garlic clove and add to bowl
- Stir through the agave syrup (or light honey)
- Stir through the Habanero chilli puree starting with a teaspoon at a time until the heat level is achieved and add salt to taste
- Add pineapple juice to achieve the desired consistency and sweetness
- Sprinkle with fresh coriander and serve
